Idly amma’s Milagai podi !!!

So, thats the tag name, one Sultan Bhai, gave me…Idly amma !!! LOL !!! :) :)

And here’s the recipe for the Milagai Podi, which when mixed with Sesame Oil, gives a mind-boggling spicy dimension to the awesome sofy Idlies. :)

BTW, do u know that Idlies are referred as the Malligai poo Idly, here in Tamil nadu. Malligai poo is the name for Jasmine. And Idlies so soft, as the petals of jasmine are the speciality of Tamil Nadu. Now, isnt that a perfect comparison ???? :P :P :P

Ok, here goes the recipe.

1 cup of Chenna Dhal

1 cup of Urid Dhal (whole ones preferred)

2.5 cups of Red Chillies

0.5 cup of Fried grams

Salt to taste

1 tsp Sugar

1 tbsp Hing powder / a piece of Hard Hing

Til (Sesame seeds) – 0.75 cup


Soak the til in water for a few minutes, drain the water.

Heat a pan, add the soaked til and fry them dry till they pop and become lightly brown.

Remove it from pan and spread it on a big plate to cool.

Now add 1 tsp of sesame oil, add the hard hing. Fry it well. Add the Urid dhal to it and keep frying till the dhal is nicely browned. Fry everything on medium heat only.

Remove the hing and Urid dhal onto the plate for cooling.

Now, add 1/2 tsp of oil and fry the Chenna dhal to a golden brown and remove to the plate for cooling.

Its the turn of Red chillies now. Add a few drops of oil and fry the red chillies till they change color. Dont allow them to become so black.


When everything is cooled, grind the red chillies, til, hing first in the mixie. Then add the dhals, salt, sugar, fried grams and grind coarsely.  You can also grind these individually and mix them later.

Go ahead, make it. Make ur breakfast with idly and dosa more spicier and tastier. :P :P :P

    Reminds me of my granda’s recipe…she makes it from scratch. And its absolute heaven to eat it with a little bit of oil! :D Yum!!!!

    Oh I luvvv this combo. Just had it for Breakfast today :)
    In Mysore exhibition and other places too, there are Mallige Idli stalls put up :P :P

      When Khushboo was topping the charts as a heroine, the Idly was re-christened as Khushboo Idly, for sometime… ;) ;)

    Thank you sooooo much for this recipe, Ums. Have been searching all over for this recipe…my aunt-in-law makes the tastiest finger-licking podi, and till date she hasnt shared the recipe with us :( . But thanks to you, I can now attempt making one :)

    BTW, lol @ the Idli amma tag. Sultan Bhai is on a roll these days :D

    Yum, yum, yum! I love idlies with idli podi! Although my idli podi comes from the stores :( Thanks so much for the recipe, Uma. Will definitely give this a try the next time I run out of idli podi :)

      Yeah…fantastic combo….and just spread the idly podi with oil on idlies and leave it for sometime…then they taste much better.. :P :P :P

    Uma. …I literally tortured my Mom to send me an Idly cooker or thattu by courier – as a result of your tempting photos and idly saga !!!
    May be it will take me some more years for me to make my own podis. I somehow get all podis through my MOM and MIL regularly!! Just have to wait for Idly cooker to come :) …hmmmm yummy!! And milaga podi dipped in Nallennai…heavenly smell and taste !! Can’t drool more!!

    :-) As kids we used to call this gunpowder !! I add sugar & have it with dosa/idli.
